American Gods – Chili recipe

so i’m reading my first Neil Gaiman book: American Gods. after only about 20 pages i was hooked. on page 30, Shadow starts thinking about the great chili his wife Laura made:

« Laura made a great chili. She used lean meat, dark kidney beans, carrots cut small, a bottle or so of dark beer, and freshly sliced hot peppers. She would let the chili cook for a while, then add red wine, lemon juice and a pitch of fresh dill, and, finally, measure out and add her chili powders. On more than one occasion Shadow had tried to get her to show him how she made it: he would watch everything she did, from slicing the onions and dropping them into the olive oil at the bottom of the pot. He had even written down the recipe, ingredient by ingredient, and he had once made Laura’s chili for himself on a weekend when she had been out of town. It had tasted okay-it was certainly edible, but it had not been Laura’s chili. »

damn. don’t that sound good? so i figured i should either 1)try and figure out the recipe myself or 2)turn to the internet gods and ask if anyone had tried their hands at the recipe.

this recipe turns up on several sites

and this one, containing cocoa, seems especially promising.

    i tried the second recipe i linked to (the one with cocoa). my comments / extra instructions:
    -heat the oil, cook the onions for about 5 minutes;
    -cook the meat until it’s almost cooked through;
    -add everything else (except the dill) in order;
    -which means i simmered it for about 1/2 hour instead of the hour recommended by the recipe;
    -add the dill towards the end.

    the carrots were still a bit hard. add earlier & cook longer.

    ok, take 2 tonight.
    -cooked the 1/2 onions in oil for about 5 minutes
    -added carrots, cooked for 2 minutes
    -added meat
    -added everything else (1 19oz can of beans, don’t remember if i had used 2 last time)
    -spices (approx): 1 tsp chili powder, 1 tsp cumin, 1/4 tsp cayenne, 1/4 tsp paprika, pinch turmeric, 1tbsp cocoa
    -no dill, no sliced hot pepper
    -dark beer used: dieu du ciel péché mortel (imperial coffee stout)

    too much liquid when done. very tasty though. add a bit more meat next time? use only half a beer?
